There are two things that I bake at least once a week, often twice.
They are, a batch or two of cupcakes at a time, and flapjacks.
These two bakes seem to do a good job of keeping my boys from wasting away with hunger between meals. They are also both super quick and easy to make.
(If the health police are reading, yes, they do eat fruit as snacks too.)
Calum and Alasdair only have an allergy to wheat (as well as the other stuff!), not gluten, which means oats are fine for them, unlike Coeliacs who can't take ordinary oats.
For the flapjacks you will need:
16oz rolled oats
3oz brown sugar
11oz dairy-free margarine
2oz golden syrup
~Mix the oats and the sugar in a large bowl.
~Melt the margarine and syrup in a pan.
~Pour over the oats mix and mix well.
~Spread out evenly in a baking tin and cook for around 20 minutes at 190C.
~When they are nicely golden they are ready.
~Leave to cool for about 10 minutes before slicing and then leave to cool in the tin completely.
